Meeting & Presentation:

Speaker: Faye Elahi, M.S., M.A. Nutritionist for special needs

Do you have a leaky gut? We welcome Faye Elahi at this month's  meeting to share her knowledge of this and other areas we should be  aware of.

As a result of the leaky gut condition, the person often develops an  overgrowth of fungi, also known as yeast or candida, which can cause  many other health problems caused by nutrient and vitamin deficiencies  like Osteomalacia and rickets, also known as Vitamin D deficiency,  anemia or iron deficiency, folate deficiency, and pernicious anemia or  vitamin B12 deficiency. These conditions are common among individuals  diagnosed with Autism, Attention Deficit Disorder (Hyperactivity  disorder), Celiac Disease, non-Celiac gluten sensitivity, food  allergies, Dyspraxia, Asthma, Eczema, and learning differences.

Learn the causes of a leaky gut and some simple treatment programs.

    Gluten-Free Baking Classics

    No need to panic when you first start a gluten-free diet. Join Dr. Claudia Pillow Ph.D. (chef and speaker on gluten intolerance) and experience this gluten-free baking class that will form the  foundation of your gluten-free repertoire. The class will conclude with  smart tips for healthy gluten-free eating and strategies for recipe  conversions. Menu: artisan style Submarine Sandwich Bread, chewy  Multigrain Pizza, luscious Chocolate Cream Pie, and Banana Nut Muffins.

    Dr.Pillow co-authored with her celiac sister, Annalise Roberts, "The Gluten-Free Good Health Cookbook, The Delicious Way to Strengthen Your Immune System and Neutralize Inflammation." In 2007, Claudia received her Ph.D. in Health Studies from Texas Women's  University. As part of her dissertation, she developed and tested a  celiac disease school screening tool and has made the program available  nationally. She lectures nationally and currently is Chief Nutrition  Officer at Hail Merry, a gluten-free snack company in Dallas, Texas.

Meeting Place for the Gluten Intolerance Group of Greater Dallas
The support group usually meets in the Southeast Conference Room located on the first floor at Presbyterian Hospital of Dallas. From Walnut Hill Lane, enter at the main entrance.  The circular drive veers left to the Valet Parking.  Enter the building an go back to the elevators and turn left.  Take the hall past the cafeteria.  Turn right at the first hallway and the conference room is on the left half way down the hall.

The group meets from 10 a.m. to 12 AM. the third Saturday of every month, except in May when it holds an annual picnic and in December when it holds an annual holiday gathering.
