Celiac Disease is an autoimmune disorder that compromises the body’s ability to digest gluten, a protein found in wheat, rye and barley. Those foods can flatten the villi in the intestines and prevent the proper absorption of food and nutrients, leading to serious health consequences. According to a 2003 study led by the University of Maryland Center for Celiac Research in Baltimore, Celiac Disease may affect as many as 1 in 133 people in the United States.
